The Secret Recipe Ingredient: Makes you want to eat more of ANY food
Why do you want to eat more potato chips? Why do you want to eat more pizza? Why we want to eat more of anything the food industry puts on the shelves? Why do you want to eat more take-out foods like Japanese or Chinese food? Ve-tsin or monosodium glutamate MSG is the secret ingredient that makes you eat more of foods and think they taste better. In Japan it is known as aji-no-moto, in China as ve-tsin, and in America it is sold as 'ac-cent'. It is not always mentioned by name, and some manufacturers list it as 'flavour enhancer 621' E621 or simply '621'. This salt like substance does not really taste that well on its own. At least we have not been able to find anyone who likes the taste of it. But put it in foods and people think the food tastes better. Now the interesting part of this salt is that it makes you eat more, and like foods better. Another interesting feature is the taste of novel foods. Normally when you eat something new you might not like it as much, but with added MSG you will like new foods and flavors better (salt and sugar also are reported to do this). (PMID: 15010178)
These unique features make this a great product for the food industry. Make a new product add some MSG, sugar and fat, and you have a product that people will eat more of than is good for them. Just start looking for this flavor enhancer on many of the foods (especially salty foods) and you will see why you are almost addicted to them.
But if you think about it you might be able to explain why you don’t like your own cooking creations as much as created recipes from the food industry. So if you are looking for a secret ingredient to make (healthy) foods taste better give a little MSG a try.
Use it as a trick when trying new flavors or recipes on your partner or date, or if you get your children to eat healthier.
